Rinse thoroughly. Cook 2.5:1 water ratio 35 minutes until tender. The deep purple colour bleeding into the water is spectacular. Season and cool.
Grill corn until charred all over. Roast peppers until blackened and sweet. Both need direct heat — the flavour is in the caramelisation.
Blend jalapeño (deseeded for mild), lime juice, olive oil, salt, and a pinch of cumin until smooth and bright green.
Black rice makes everything placed on it look vivid. Layer corn, peppers, and mango over the dark base. The colour contrast is the point. Dress and serve with avocado.
